Cependant, les potentialités de cette filière se voient menacées par de multiples pathologies aviaires contraignant les producteurs à faire recours à des antibiotiques. Malheureusement, ces derniers ne le font pas selon les bonnes règles d’utilisation des médicaments et cela se répercute sur la qualité des œufs qu’ils produisent. D’où l’intérêt de notre étude de recherche de résidus d’antibiotiques par une méthode qualitative dans les œufs produits et commercialises à Dakar (Sénégal) en 2021. Elle a été menée en deux phases de Janvier à Septembre 2021 : une phase d’étude longitudinale sur le terrain et une phase d’analyse réalisée au laboratoire de Microbiologie Immunologie et Pathologie Infectieuse (MIPI) de l’Ecole Inter-états des Sciences et Médecine Vétérinaires (EISMV) de Dakar par la méthode Premi® Test. La phase de suivi sur le terrain consistait à recenser des informations sur les pratiques d’utilisation des antibiotiques et la production
d’œufs. Les résultats du suivi ont révélé que 65% des élevages utilisent des antibiotiques pendant la phase de production des œufs de consommation et 100% de ces élevages ne respectaient pas le délai d’attente. Les antibiotiques les plus utilisés sont ceux de la famille des polymyxines et des quinolones avec des taux d’utilisation respectifs de 72,73% et 63,64% par les fermes.
Les résultats issus de l’analyse de 121 échantillons d’œufs provenant des fermes, marchés, boutiques et supermarchés ont donné une prévalence générale de 13,22% avec une prévalence de 20,00% pour les fermes, 16,00% pour les marchés, 5,71% pour les boutiques et nulle pour les supermarchés. Ces résultats montrent que la prévalence en résidus d’antibiotiques est plus élevée au niveau des fermes.
