Le secteur de la pêche occupe une place importante dans l'économie sénégalaise. Cette importance est liée en partie au volume des exportations. Cependant, les sociétés de pêche tournées vers l'exportation sont souvent confrontées à des difficultés liées à la non conformité sanitaire de leurs produits. Après le renforcement des autocontrôles aux différentes étapes de la transformation, il a paru nécessaire de connaître la qualité bactériologique de la matière première (le poisson) dont les données disponibles sont insuffisantes. L'étude a consisté à prélever 48 échantillons de poissons au niveau des sites représentant la filière de la matière première: la mer, la plage et l'entrée des usines. Les analyses bactériologiques de la chair, des branchies et de la peau des poissons prélevés aux différents sites ont montré que:
, Les échantillons de chair sont contaminés à 1 OO % par la flore aérobie mésophile totale et à 6,25 % par les coliformes fécaux. Les échantillons des branchies et peau sont dans l'ensemble contaminés par les streptocoques fécaux . Toutefois, les germes pathogènes de genres Salmonella, Staphylococcus et Clostridium, n'ont pas été isolés. Par ailleurs, l'étude comparative des différents sites a relevé une augmentation de la contamination des poissons, de la mer vers les usines. Ce qui traduit une contamination secondaire. Compte tenu de ces résultats, il paraît indispensable d'améliorer les conditions de transport, d'entreposage et de conservation des poissons afin de réduire la contamination post-capture. |
