En raison de l’évolution concomitante des régimes alimentaires et du mode de vie, les maladies non transmissibles (MNT) deviennent des causes de plus en plus importantes de décès, autant dans les pays en développement que dans les pays à économie en transition. Le Sénégal n’est pas en marge de cette transition nutritionnelle et cela s’observe à travers la consommation hors foyer surtout dans des quartiers populaires avec le développement d’ateliers de restauration collective appelés dibiteries. Cependant, la viande produite dans ces dibiteries est particulièrement appréciée par les populations et sa consommation est très ancrée dans les habitudes alimentaires des sénégalais.
La présente étude vise à comprendre le comportement de consommation de la viande de dibiteries des populations de Dakar
face aux risques de MNT. La démarche méthodologique utilisée a été basée sur une enquête transversale à l’aide d’un questionnaire structuré dans 404 ménages de la région de Dakar de novembre 2018 à Février 2019. Les données recueillies ont été saisies, dépouillées et analysées à l’aide des logiciels Sphinx Plus2 version 5, Excel de Microsoft Windows 10 et SPSS Statistics version 24. Les résultats ont montré que 60,88% des personnes dans les ménages consomment la viande de dibiteries en majorité à une fréquence de 1 à 3 fois par mois pour 57,93% des ménages avec des quantités
variant de 50g à 6000g par consommation. Et cette dernière est positivement influencée par la localisation géographique, le genre et le revenu mensuel des populations puis négativement par l’âge et la taille de la famille. 80% des personnes sont conscientes des risques liés à une consommation quotidienne de la viande mais ignorent la quantité de viande recommandée par jour pour réduire les risques de MNT. Cependant la présence de MNT est assez élevée parmi les
proches des participants à l’enquête avec 59,41% des répondants ayant au moins un proche atteint par une MNT dont le diabète (46,10%), hypertension artérielle (26,59%), l’accident vasculaire cérébrale (12,44%), la goutte (10,24%). Et près du tiers (27,41%) des participants à l’enquête souffrent d’au moins d’une MNT et parmi eux 45,04% sont consommateurs de viande de dibiteries. L’hypertension artérielle, diabète, hypotension et goutte sont les plus
énumérées. Les populations ont en majorité une forte perception sur les risques de MNT. En outre, cette forte perception sur les risques est expliquée par l’âge et le niveau d’éducation des personnes. Par ailleurs, la théorie du comportement planifié (TCP) a permis de prédire le comportement des consommateurs de viande de dibiteries face aux risques de MNT. Il ressort que face aux risques de MNT, l’intention de consommer la viande de dibiteries est influencée par l’attitude, la pression sociale perçue, la perception du contrôle sur le comportement et la perception sur les risques d’infection alimentaire. Ces variables permettent d’expliquer 76% de la variance de l’intention et le comportement effectif réalisé a été prédit par l’intention et la perception du contrôle sur le comportement. Chez
les consommateurs de viande de dibiteries, les interventions comme les éducations nutritionnelles visant à prévenir ou contrôler les maladies non transmissibles en favorisant l’adoption de comportements alimentaires sains devraient tenir compte de ces facteurs. Ces facteurs permettront de fournir des assises théoriques au développement d’interventions visant à sensibiliser les populations pour la promotion des comportements sans risques face aux risques de maladies non transmissibles. |
